My Favorite Carrot Cake Recipe


This is so good, that it would be wrong not to share it. So here goes.

Ingredients

1 1/2 cups of shredded carrot
2 tbs. lemon juice
1/2 cup crushed pineapple (drained)


1 1/2 cups flour
1 1/4 cups sugar
1 teas. baking powder
1 teas. baking soda
1 teas. salt
1 teas. cinnamon
1/2 teas. cloves
1/2 teas. nutmeg
1/2 teas. allspice

3/4 cup vegetable oil
3 eggs
1 cup of golden raisins
1 cup of walnuts

1. Shred carrots.
2. Mix with lemon juice and pineapple. Set aside
3. In a large bowl combine flour, sugar, baking soda, baking powder, salt, and spices. Mix well
4. Add oil and beat.
5. Add eggs one at a time and beat until well blended.
6. Add raisins, nuts and carrot/pineapple mixture. Blended.
7. Pour batter into 2 prepared loaf pans.
8. Bake at 350. 45 minutes.

Cream Cheese Icing

1 8oz. package of cream cheese
1 stick of butter
16 oz. powdered sugar
1 teas. vanilla

In a mixer, blend together softened cream cheese, butter, and vanilla. Slowly add powdered sugar and mix until fluffy. Spread over cool loafs. For an added touch you can sprinkle crushed pecans or shredded coconut on top.

Sounds good! We are having boxed carrot cake w/ cream cheese frosting for desert today - wish I saw this first. :)
